A "medium-dark roast" coffee is a roast level that falls between a medium roast and a dark roast, meaning the beans are roasted longer than a medium roast, resulting in a deeper color, richer body, and more pronounced flavors like caramel, chocolate, and spice, while still maintaining some acidity compared to a full dark roast; typically, the beans will show a slight oil sheen on the surface and are roasted until near the end of the "second crack" stage during the roasting process
Medium dark roasted beans are heated to a temperature of between 437-446F from the beginning or middle of the second crack. The flavors and aromas of the coffee roasting process become noticeable, and the taste of the coffee may be somewhat spicy.
